Ingredients

  • 300 grams pasta (spaghetti or penne)
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 teaspoon red chili flakes
  • 400 grams crushed tomatoes (canned)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams Parmesan cheese (grated)
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Mince the garlic and add it to the skillet. Sauté for about 1 minute or until fragrant, being careful not to burn the garlic.

Add the red chili flakes to the skillet and stir for 30 seconds to release their flavors.

Pour in the crushed tomatoes and stir in the tomato paste. Mix well and simmer for 5 minutes.
