Ingredients

  • 6 pieces Roma tomatoes
  • 2 pieces Jalapeño peppers
  • 1 medium Red onion
  • 3 pieces Garlic cloves
  • 0.5 cup Cilantro leaves
  • 1 whole Lime
  • 0.5 teaspoon Cumin powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Wash and pat dry the Roma tomatoes, jalapeño peppers, and cilantro leaves.

Step 2

Preheat a grill or stovetop griddle over medium heat. Lightly brush the Roma tomatoes, jalapeño peppers, and garlic cloves with olive oil.

Step 3

Place the oiled vegetables on the grill and roast them until lightly charred on all sides, about 2-3 minutes per side. This will enhance the smoky flavor.

Step 4

Remove the vegetables from the grill and let them cool slightly. Once cool, roughly chop the charred Roma tomatoes and jalapeños, removing the seeds from the jalapeños if you prefer a milder salsa.

Step 5

Peel and finely chop the grilled garlic. Dice the red onion into small pieces.

Step 6

In a blender or food processor, combine the chopped tomatoes, jalapeños, grilled garlic, diced onion, cilantro leaves, cumin powder, salt, and black pepper. Squeeze the juice of the lime over the mixture.

Step 7

Pulse the blender several times until the salsa reaches your desired consistency (chunky or smooth). Be careful not to over-blend if you like it chunky.

Step 8

Taste the salsa and adjust the salt, lime juice, or seasoning as needed.

Step 9

Transfer the salsa to a bowl and let it rest for at least 30 minutes in the refrigerator to allow the flavors to meld together.

Step 10

Serve with tortilla chips, tacos, or as a condiment for grilled meats, and enjoy the bold, spicy kick!
