Ingredients

  • 2 medium-sized leeks
  • 1 can (14 ounces), drained and chopped artichoke hearts
  • 8 ounces, softened cream cheese
  • 1 cup sour cream
  • 0.5 cup mayonnaise
  • 1 cup, grated Parmesan cheese
  • 1 cup, shredded mozzarella cheese
  • 2 cloves, minced garlic
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, chopped (optional for garnish) fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Trim the dark green tops and root ends of the leeks, leaving only the white and light green parts. Slice them in half lengthwise and rinse thoroughly to remove any dirt. Finely chop the leeks.

Heat the olive oil in a skillet over medium heat. Add the chopped leeks and garlic, and sauté for 5-7 minutes until they are soft and translucent. Remove from heat and allow to cool slightly.
