Ingredients

  • 4 pieces Medium-sized potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground turmeric
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Ground coriander
  • 1 teaspoon Fresh ginger (finely grated)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Fresh cilantro (chopped)
  • 0.5 piece Lemon (juiced)
  • 1 piece Green chilies (optional, finely chopped)

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Step 2

Wash the potatoes thoroughly and pat them dry. Using a fork, pierce each potato several times to allow steam to escape while baking.

Step 3

Rub the potatoes with 1 tablespoon of olive oil and sprinkle a pinch of salt over them. Place them directly on the oven rack or on the prepared baking sheet.

Step 4

Bake the potatoes for 40-50 minutes, or until they are tender when pierced with a knife or fork.

Step 5

While the potatoes are baking, prepare the spice mixture. In a small bowl, combine the remaining olive oil, ground turmeric, ground cumin, paprika, salt, black pepper, ground coriander, grated ginger, minced garlic, and, if using, finely chopped green chilies.

Step 6

Once the potatoes are done baking, carefully remove them from the oven and let them cool slightly for 5-10 minutes.

Step 7

Using a knife, make a cross-shaped slit on the top of each potato and gently push the sides to open them up.

Step 8

Spoon the spice mixture evenly over each potato, letting it seep into the cuts. Use a spoon or brush to spread it evenly if needed.

Step 9

Return the potatoes to the oven and bake for an additional 10 minutes to allow the spices to absorb and caramelize slightly.

Step 10

Remove the spiced potatoes from the oven, drizzle with lemon juice, and garnish with freshly chopped cilantro.

Step 11

Serve hot as a flavorful side dish or enjoy as a delicious vegetarian main course.
