Ingredients

  • 2 lbs Small red potatoes
  • 6 slices Thick-cut bacon
  • 1 medium Yellow onion
  • 1/3 cup Apple cider vinegar
  • 1/2 cup Chicken broth
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 1/2 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

In a large pot, add the red potatoes and cover them with water. Bring to a boil over medium-high heat and cook for 10-12 minutes, or until the potatoes are tender when pierced with a fork. Drain and allow to cool slightly.

Step 2

While the potatoes are cooking, chop the bacon into small pieces and finely dice the onion.

Step 3

In a large skillet over medium heat, cook the bacon pieces until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered bacon fat in the skillet.

Step 4

Add the diced onion to the skillet with the bacon fat. Cook over medium heat for about 5-6 minutes, stirring frequently, until the onions are softened and golden brown.

Step 5

Stir the apple cider vinegar, chicken broth, granulated sugar, Dijon mustard, salt, and black pepper into the skillet. Bring the mixture to a gentle simmer, stirring until the sugar is dissolved and the sauce is slightly reduced, about 3-4 minutes.

Step 6

Cut the cooked potatoes into thick slices or quarters, depending on your preference. Add the potatoes to the skillet with the sauce, gently stirring to coat them evenly.

Step 7

Fold in the cooked bacon pieces and heat everything through for 2-3 minutes. Taste and adjust seasoning if needed.

Step 8

Transfer the hot German potatoes to a serving dish and garnish with freshly chopped parsley. Serve warm as a side dish with your favorite main course.
