Ingredients

  • 3 cups Fresh corn kernels (about 5 ears of corn)
  • 1 medium Red bell pepper, diced
  • 1 medium Green bell pepper, diced
  • 1 medium Jalapeño pepper, finely diced
  • 1 small Red onion, finely chopped
  • 1 cup White vinegar
  • 0.5 cup Sugar
  • 0.5 cup Water
  • 1 teaspoon Ground mustard
  • 0.5 teaspoon Ground turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Start by shucking the ears of corn and cutting the kernels off the cob. You’ll need roughly 3 cups of kernels.

Step 2

Dice the red bell pepper, green bell pepper, and finely chop the jalapeño pepper (remove seeds for less heat, if desired). Finely chop the red onion as well.

Step 3

In a large saucepan, combine the white vinegar, sugar, water, ground mustard, ground turmeric, salt, and black pepper. Stir well to dissolve the sugar and spices.

Step 4

Add the corn, diced bell peppers, jalapeño, and onion to the saucepan. Stir to combine.

Step 5

Place the saucepan over medium heat and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 15 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.

Step 6

Once cooked, remove the saucepan from heat and let the relish cool slightly.

Step 7

Transfer the relish to clean, sterilized jars if you plan to store it, or serve immediately as a topping or side dish.

Step 8

Store any leftovers in an airtight container in the refrigerator for up to 1 week.
