Ingredients

  • 15 pieces dried red chilies
  • 5 pieces fresh red chilies
  • 6 pieces garlic cloves
  • 2 tablespoons ginger
  • 3 pieces shallots
  • 3 tablespoons vegetable oil
  • 2 tablespoons white vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 4 tablespoons water

Directions

Step 1

Soak the dried red chilies in hot water for 10 minutes to soften them. Drain and set aside.

Step 2

Roughly chop the fresh red chilies, garlic cloves, ginger, and shallots.

Step 3

In a blender or food processor, combine the soaked dried chilies, fresh red chilies, garlic, ginger, shallots, and water. Blend until a smooth paste forms.

Heat the vegetable oil in a medium-sized pan over medium heat.

Add the chili paste to the pan and sauté for 5 minutes, stirring constantly to prevent sticking.
