Ingredients

  • 2 cups Black beans
  • 2 tablespoons Olive oil
  • 3 units Garlic cloves
  • 1 unit Yellow onion, finely chopped
  • 1 unit Jalapeño, seeded and finely diced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Fresh lime juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 0.5 cup Water or vegetable broth
  • 1 cup Shredded Monterey Jack or Cheddar cheese
  • 2 tablespoons Chopped fresh cilantro
  • 2 tablespoons Chopped scallions (optional, for garnish)

Directions

Step 1

Rinse and drain the black beans if using canned beans.

Step 2

Heat the olive oil in a medium skillet over medium heat.

Step 3

Add the garlic, onion, and jalapeño. Sauté for 3-4 minutes until the onion is soft and translucent.

Step 4

Stir in the ground cumin and smoked paprika, cooking for another 30 seconds until fragrant.

Step 5

Add the black beans, lime juice, salt, black pepper, and water or vegetable broth to the skillet.

Step 6

Reduce the heat to low and simmer for 5-6 minutes, stirring occasionally to let the flavors meld together.

Step 7

Using a potato masher or the back of a spoon, partially mash the beans in the skillet to create a creamy texture while leaving some beans whole for texture. Add more water or broth if the mixture appears too thick.

Step 8

Transfer the bean mixture to an oven-safe dish and sprinkle shredded Monterey Jack or Cheddar cheese evenly over the top.

Step 9

Place the dish under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Step 10

Remove from the oven and sprinkle with chopped cilantro and scallions, if using.

Step 11

Serve warm with tortilla chips, veggie sticks, or crusty bread.
