Ingredients

  • 200 grams bean thread noodles (glass noodles)

  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 medium carrot, julienned
  • 1 medium bell pepper, sliced thinly
  • 3 stalks green onions, chopped
  • 100 grams spinach or bok choy
  • 500 milliliters water

Directions

Step 1

Soak the bean thread noodles in warm water for 10 minutes, or until softened. Drain and set aside.

Step 2

In a small bowl, mix together soy sauce, dark soy sauce, oyster sauce, sesame oil, and sugar. Set the sauce aside.

Step 3

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add minced garlic, grated ginger, and red chili flakes. Stir-fry for 30 seconds until fragrant.
