Ingredients

  • 4 medium Tomatoes
  • 1 large Cucumber
  • 1 medium Green bell pepper
  • 1 small Red onion
  • 1 cup Kalamata olives
  • 200 grams Feta cheese
  • 4 tablespoons Extra virgin olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash and dry all vegetables thoroughly.

Step 2

Cut the tomatoes into wedges or large chunks and place them in a large salad bowl.

Step 3

Peel the cucumber if desired, then slice it into rounds or half-moons. Add to the bowl.

Step 4

Remove seeds and membrane from the green bell pepper, slice it into thin rings or strips, and add it to the bowl.

Step 5

Peel the red onion and slice it thinly into half-moons. Add to the salad bowl.

Step 6

Add the Kalamata olives to the bowl. For a more rustic presentation, leave them whole; for easier eating, you can pit and slice them if desired.

Step 7

Cut the feta cheese into thick slices or large cubes. Place the pieces on top of the salad.

Step 8

In a small bowl or jar, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.

Step 9

Drizzle the dressing evenly over the salad.

Step 10

Gently toss the salad just before serving, or leave it as is for a more traditional presentation. Serve immediately.
