Directions

Step 1

Rinse and sort the dried black-eyed peas, discarding any debris. Place them in a large bowl and cover with water. Soak the peas overnight or for at least 6 hours. Alternatively, use the quick-soak method: boil the peas in water for 2 minutes, then remove from heat and let them soak for 1 hour.
