  • 1 bay leaf

  • 1 teaspoon smoked paprika
  • 2 teaspoons Cajun seasoning
  • 1 cup long-grain white rice
  • 2 stalks green onions, sliced for garnish
  • 1 to taste hot sauce (optional, for serving)

Directions

Step 1

Heat a large Dutch oven or heavy-bottomed pot over medium heat. Add the olive oil, then add the sliced andouille sausage. Cook for 5–7 minutes until browned. Remove the sausage and set aside.

In the same pot, add the diced onion, green bell pepper, and celery. Sauté the vegetables for 5–7 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

Stir in the rinsed black-eyed peas, chicken broth, bay leaf, thyme, smoked paprika, and Cajun seasoning. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 45 minutes, stirring occasionally.
