Ingredients

  • 2 tablespoons Butter
  • 2 cups Cooked potatoes (peeled and diced)
  • 1 cup Sausage (or ham, diced)
  • 1 small Onion (finely chopped)
  • 1 small Bell pepper (diced, any color)
  • 4 large Eggs
  • 2 tablespoons Milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 cup Parmesan cheese (grated, optional)
  • 2 tablespoons Fresh parsley (chopped, for garnish, optional)

Directions

Step 1

In a large skillet, melt the butter over medium heat.

Step 2

Add the diced potatoes to the pan and cook for 5-7 minutes, stirring occasionally, until they are golden and slightly crispy.

Step 3

Add the sausage (or ham), chopped onion, and diced bell pepper to the skillet. Cook for an additional 4-5 minutes, stirring occasionally, until the vegetables are softened and the sausage is lightly browned.

Step 4

While the skillet mixture is cooking, whisk together the eggs, milk, salt, and black pepper in a medium bowl.

Step 5

Reduce the heat to low and pour the egg mixture evenly over the potato and sausage mixture in the skillet. Let it cook gently for 3-4 minutes, stirring occasionally, until the eggs are just set but still soft.

Step 6

If desired, sprinkle Parmesan cheese over the mixture and allow it to melt for 1-2 minutes.

Step 7

Remove the skillet from the heat, garnish with chopped parsley if using, and serve immediately.
