  • 4 pieces Eggs
  • 2 medium Potatoes
  • 1 small Yellow onion
  • 1 medium Bell pepper (red or yellow)

  • 2 tablespoons Milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional)

Directions

Step 1

Peel and dice the potatoes into small 1/2-inch cubes. Set aside.

Chop the onion and bell pepper into small pieces. If desired, finely chop fresh parsley for garnish and set it aside.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.
