Ingredients

  • 6 large Egg yolks
  • 0.75 cups Granulated sugar
  • 1 cups Coconut milk
  • 1.5 cups Whole milk
  • 1 cups Heavy cream
  • 0.5 cups Pineapple juice
  • 1 teaspoons Vanilla extract
  • 0.5 cups Dark rum
  • 0.5 teaspoons Ground nutmeg (plus extra for garnish)

Directions

Step 1

In a medium-sized mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened, about 2-3 minutes.

Step 2

In a medium saucepan, combine the coconut milk, whole milk, and heavy cream. Heat over medium heat until just starting to steam, but do not let it boil.

Step 3

Gradually and carefully temper the egg yolk mixture by slowly adding the hot milk mixture, one ladle at a time, while whisking constantly to avoid curdling the eggs.

Once tempered, pour the mixture back into the saucepan and place it over low heat. Stir constantly with a wooden spoon or silicone spatula until the mixture thickens slightly and coats the back of the spoon, about 5-7 minutes. Do not boil.
