Ingredients

  • 200 grams Granulated sugar
  • 50 grams Light corn syrup or golden syrup
  • 2 tablespoons Honey
  • 2 tablespoons Water
  • 1.5 teaspoons Baking soda
  • 200 grams Chocolate (optional, for coating)

Directions

Step 1

Prepare a 9-inch (23cm) square baking pan or sheet by lining it with parchment paper. Lightly grease the parchment to ensure easy removal.

Step 2

In a medium-sized, heavy-bottomed saucepan, combine the granulated sugar, light corn syrup or golden syrup, honey, and water.

Step 3

Place the saucepan over medium heat and stir gently until the sugar dissolves. Stop stirring once the sugar is fully dissolved to prevent crystallization.

Step 4

Bring the mixture to a boil and allow it to reach 300°F (150°C) on a candy thermometer. This is the hard crack stage. Be careful not to stir during this process.

Step 5

Once the mixture reaches the correct temperature, remove it from the heat immediately. Working quickly, sift and sprinkle the baking soda evenly over the mixture.

Using a heatproof silicone spatula or wooden spoon, stir rapidly to incorporate the baking soda. The mixture will foam and expand vigorously—this is normal and creates the signature honeycomb texture.

Quickly pour the foamy mixture into the prepared baking pan, spreading it gently if necessary. Avoid pressing or flattening it, as this will ruin the airy structure.
