Ingredients

  • 200 grams Granulated sugar
  • 100 grams Golden syrup (or light corn syrup)
  • 1.5 teaspoons Baking soda
  • 2 tablespoons Water

Directions

Step 1

Line a baking sheet or tray with parchment paper and set it aside. Ensure it is placed on a heatproof surface as the syrup will become very hot.

In a medium, heavy-bottomed saucepan, combine the granulated sugar, golden syrup, and water.

Place the pan over medium heat and stir gently until the sugar has dissolved. Avoid stirring excessively to prevent crystallization.

Allow the mixture to come to a boil. Stop stirring and let it simmer, occasionally swirling the pan gently, until the mixture reaches a deep golden amber color (approximately 150°C or 300°F on a candy thermometer). This will take about 4–5 minutes.
