Ingredients

  • 250 grams spaghetti or noodles of choice
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1.5 tablespoons honey
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon salt
  • 2 tablespoons parmesan cheese, grated (optional)
  • 1 bunch fresh parsley or thyme sprigs for garnish (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or noodles according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the noodles.

Step 2

While the noodles are cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and fresh thyme leaves to the skillet. Sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 4

Reduce the heat to low and stir in the lemon zest, lemon juice, honey, salt, and black pepper. Mix well to create the sauce. If the mixture seems too thick, add 1-2 tablespoons of the reserved pasta cooking water to loosen it.

Step 5

Add the cooked noodles to the skillet and toss gently to coat them evenly with the sauce. If needed, add more reserved pasta water, a tablespoon at a time, to achieve your desired consistency.

Step 6

Taste and adjust the seasoning as needed. If using, sprinkle the grated Parmesan cheese over the noodles and gently toss to combine.

Step 7

Transfer the noodles to a serving dish and garnish with fresh parsley or sprigs of thyme, if desired. Serve immediately and enjoy!
