Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter (cold and cubed)
  • 50 grams Granulated sugar
  • 1 piece Egg yolk
  • 2 tablespoons Cold water
  • 200 milliliters Heavy cream
  • 150 grams Honey
  • 2 pieces Eggs
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a 9-inch tart pan with removable bottom.

Step 2

In a mixing bowl, combine the flour, sugar, and a pinch of salt. Add the cold cubed butter and rub it into the flour mixture with your fingertips until it has the texture of coarse breadcrumbs.

Step 3

Add the egg yolk and cold water, mixing until the dough comes together. Form into a ball, wrap in plastic wrap, and chill for 20 minutes.

Roll out the chilled dough on a lightly floured surface to fit the tart pan. Press the dough into the pan and trim the edges. Prick the base all over with a fork. Line with parchment paper and fill with baking beans or weights.
