Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter (softened)
  • 0.75 cup light brown sugar (packed)
  • 0.5 cup honey
  • 1 piece large egg
  • 1 teaspoon vanilla extract
  • 0.25 cup granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter and brown sugar together on medium speed until light and fluffy, about 2 minutes.

Step 4

Add the honey, egg, and vanilla extract to the butter mixture. Beat on medium speed until fully combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a smooth dough forms. Scrape down the sides of the bowl with a spatula as needed.

Step 6

Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in the granulated sugar to coat.

Step 7

Place the sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 9-11 minutes, or until the edges are set and the cookies are slightly puffed. The centers may look soft, but they will firm up as they cool.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days.
