Ingredients

  • 1 cup White rice (short grain or arborio)
  • 4 cups Whole milk
  • 1 cup Water
  • 0.5 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 1 pinch Salt
  • 1 tablespoon Butter (optional)
  • 0.25 cup Chopped nuts or dried fruit (optional, for garnish)

Directions

Step 1

In a medium-sized heavy-bottomed saucepan, combine the rice, water, and a pinch of salt. Place the saucepan over medium-high heat and bring it to a boil.

Step 2

Once boiling, reduce the heat to low, cover the saucepan with a lid, and simmer for 10 minutes until the rice has absorbed most of the water.

Step 3

Stir in the whole milk and bring the mixture to a gentle simmer. Cook the rice on low heat, stirring frequently, for about 25-30 minutes until the mixture thickens and the rice becomes tender. Stirring often prevents the rice from sticking to the bottom of the pan.

Step 4

Once the rice is tender and the pudding has thickened, turn off the heat and stir in the honey, vanilla extract, and ground cinnamon. Taste and adjust the sweetness if needed by adding more honey.

Step 5

If using butter, stir it in at this stage to add richness to the pudding.

Step 6

Allow the pudding to cool for about 5 minutes, as it will thicken slightly as it cools.

Step 7

Serve the Honey Rice Pudding warm or chilled. Garnish with chopped nuts or dried fruit if desired.
