Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 0.5 cup orange juice
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tsp zest of an orange
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 2 green onions, sliced
  • 1 red bell pepper, thinly sliced
  • 1 tsp sesame seeds (optional, for garnish)
  • 2 cups cooked white rice (for serving)

Directions

Step 1

In a small bowl, whisk together the orange juice, honey, soy sauce, orange zest, and cornstarch mixed with water. Set aside.

Step 2

Heat the sesame oil in a large skillet or wok over medium-high heat.

Step 3

Add the shrimp in a single layer and cook for 2-3 minutes on each side, until pink and opaque. Remove shrimp from the skillet and set aside.

Step 4

In the same skillet, add the minced garlic and sliced red bell peppers. Stir fry for 2-3 minutes, until the peppers are slightly softened.

Step 5

Pour the prepared orange sauce into the skillet, stirring constantly until it thickens (about 2-3 minutes).

Step 6

Return the cooked shrimp to the skillet and toss to coat in the sauce.

Step 7

Add the sliced green onions and cook for another minute, just until heated through.

Step 8

Garnish with sesame seeds if desired, and serve immediately over cooked white rice.
