Ingredients

  • 1 cup Rolled oats
  • 1 cup Boiling water
  • 0.25 cup Honey
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 2.25 teaspoons Active dry yeast
  • 0.25 cup Warm water (110°F/45°C)
  • 2.5 cups All-purpose flour
  • 0.5 cup Whole wheat flour
  • 0 as needed Nonstick cooking spray
  • 2 tablespoons Extra rolled oats (for topping)

Directions

Step 1

In a large mixing bowl, combine the rolled oats, boiling water, honey, butter, and salt. Stir until the butter is completely melted, then let the mixture cool to lukewarm (about 15 minutes).

Step 2

In a small bowl, dissolve the yeast in the warm water. Let it sit for 5-10 minutes, or until foamy, indicating the yeast is active.

Step 3

Add the yeast mixture to the cooled oat mixture, stirring to combine.

Step 4

Gradually add the all-purpose flour and whole wheat flour to the wet ingredients, mixing until a soft dough forms. Transfer the dough to a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic. Add small amounts of flour if the dough is too sticky.

Step 5

Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 6

Preheat the oven to 350°F (175°C). Lightly grease a 2-quart casserole dish with nonstick cooking spray.

Step 7

Punch down the dough and shape it into a round loaf that fits neatly into the casserole dish. Place the dough in the dish, cover, and let rise again for 30 minutes, or until slightly puffy.

Step 8

Before baking, lightly brush the top of the dough with water and sprinkle with the extra rolled oats for garnish.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.

Step 10

Remove the casserole dish from the oven and let the bread cool in the dish for 10 minutes. Transfer the bread to a wire rack to cool completely before slicing.
