  • 1 pound Pork tenderloin

  • 0.25 teaspoon Black pepper
  • 0.5 cup All-purpose flour

  • 2 tablespoons Unsalted butter
  • 0.5 cup Chicken broth
  • 2 tablespoons Dijon mustard
  • 1.5 tablespoons Honey
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Slice the pork tenderloin into 1/2-inch thick medallions. Place each medallion between two sheets of plastic wrap and use a meat mallet to pound them to about 1/4-inch thickness.

Season the pork scaloppine with salt and black pepper on both sides.
