Ingredients

  • 4 pieces pork chops (bone-in or boneless)
  • 4 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped (optional)

Directions

Step 1

Pat the pork chops dry with paper towels and season both sides with salt, black pepper, and smoked paprika.

Step 2

In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, garlic, and olive oil until well combined. Set aside.

Step 3

Heat a large skillet over medium-high heat. Once hot, add a drizzle of olive oil to the pan.

Step 4

Sear the pork chops for about 2-3 minutes per side until golden brown. Remove the chops from the skillet and set aside.

Step 5

Lower the heat to medium and pour the honey mustard mixture into the skillet, scraping up any browned bits at the bottom of the pan with a wooden spoon.

Step 6

Bring the sauce to a gentle simmer, then return the pork chops to the skillet. Spoon the sauce over the pork chops to coat them.

Step 7

Cover the skillet with a lid and cook for 7-10 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).

Step 8

Remove the pork chops from the skillet and let them rest for 5 minutes.

Step 9

Garnish with fresh rosemary if desired and serve the pork chops with the remaining sauce from the skillet.
