Ingredients

  • 6 pieces Bone-in, skin-on chicken thighs
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 0.25 cup Honey
  • 0.25 cup Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 2 sprigs Fresh rosemary (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the chicken thighs dry with paper towels and season both sides with salt, black pepper, garlic powder, and paprika.

Step 3

In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium-high heat.

Step 4

Place the chicken thighs skin-side down in the pan and sear for 4-5 minutes, until the skin is golden brown and crispy. Flip the thighs and sear the other side for an additional 3 minutes. Remove the chicken from the pan and set aside temporarily.

Step 5

In the same pan, reduce the heat to medium and whisk together the honey, Dijon mustard, and apple cider vinegar. Allow the sauce to simmer for 2-3 minutes, stirring occasionally, until slightly thickened.

Step 6

Return the seared chicken thighs to the pan, skin-side up, and spoon some of the sauce over each piece.

Step 7

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Step 8

Remove the skillet from the oven and let the chicken rest for 5 minutes. Spoon the pan sauce over the thighs before serving for extra flavor.

Step 9

Optional: Garnish with fresh rosemary sprigs and serve hot with your favorite side dishes, such as roasted vegetables or mashed potatoes.
