Directions

Step 1

Prepare your workspace by sterilizing 4-5 half-pint jars and their lids by boiling them in hot water for 10 minutes; keep them warm until ready to use.

In a large pot, combine the lemon juice and water. Place the pot over medium-high heat.

Whisk in the powdered pectin, ensuring it dissolves completely, and bring the mixture to a rolling boil that cannot be stirred down.

Add the honey and granulated sugar to the pot, stirring constantly to combine.

Increase the heat to high and bring the mixture back to a rolling boil. Boil for 1-2 minutes while stirring to prevent scorching.

Test the jelly for doneness by dipping a spoon into the mixture and letting it cool slightly; it should coat the back of the spoon and run off in slow, heavy drops.
