Ingredients

  • 120 grams Gluten-free cornflakes
  • 90 grams Unsalted butter
  • 4 tablespoons Honey
  • 0.25 cup Granulated sugar

Directions

Step 1

Preheat your oven to 150°C (300°F) and line a 12-cup muffin tin with paper cupcake liners.

Step 2

In a medium saucepan, melt the unsalted butter, honey, and sugar together over low heat. Stir continuously until the mixture is fully melted and smooth.

Step 3

Increase the heat slightly and bring the mixture to a gentle simmer. Allow it to simmer for about 2 minutes, stirring occasionally, until it thickens slightly. Remove from heat.

Step 4

Place the gluten-free cornflakes in a large mixing bowl. Pour the honey-butter mixture over the cornflakes, and gently stir with a wooden spoon or silicone spatula until all the flakes are evenly coated.

Spoon the mixture into the prepared cupcake liners, dividing it evenly among the 12 cups and pressing down gently to compact each one slightly.
