Ingredients

  • 8 pounds bone-in spiral-cut ham
  • 1.5 cups honey
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons Dijon mustard
  • 2 tablespoons soy sauce
  • 0.5 cups brown sugar
  • 0.5 cups orange juice, freshly squeezed
  • 12 cloves, whole

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Remove the ham from its packaging and place it in a roasting pan flat side down. If desired, score the surface of the ham in a diamond pattern with a sharp knife.

Step 3

In a medium saucepan, combine honey, grated ginger, Dijon mustard, soy sauce, brown sugar, and orange juice. Heat over medium until the mixture is smooth and sugar is dissolved. Remove from heat.

Step 4

Stud the top of the ham with whole cloves by pushing them into the scored pattern or evenly spacing them across the surface.

Step 5

Brush a generous amount of the honey ginger glaze over the entire ham.

Step 6

Cover the roasting pan loosely with aluminum foil to prevent the ham from drying out and bake for approximately 10-12 minutes per pound, or until an internal temperature of 140°F (60°C) is reached.

Step 7

Every 30 minutes, remove the ham from the oven and baste it with additional glaze to keep it moist and flavorful.

Step 8

During the last 20 minutes of cook time, remove the foil, apply a final coat of glaze, and increase the oven temperature to 425°F (220°C) to caramelize the glaze and create a golden, glossy finish.

Step 9

Remove the ham from the oven and let it rest for 10-15 minutes before carving.

Step 10

Slice and serve warm, garnished with fresh sprigs of rosemary or orange slices if desired.
