  • 2.25 teaspoons Active dry yeast
  • 1 third cup Honey
  • 2 Large eggs
  • 1 Egg yolk
  • 3 tablespoons Unsalted butter (melted)
  • 4 cups All-purpose flour
  • 1.5 teaspoons Salt
  • 1 Egg (for egg wash)
  • 1 tablespoon Water (for egg wash)
  • 1 tablespoon Poppy seeds or sesame seeds (optional for topping)

Directions

Step 1

In a large mixing bowl, combine the warm water and active dry yeast. Let it sit for 5–10 minutes until the yeast dissolves and becomes foamy.

Add the honey, 2 eggs, 1 egg yolk, and melted butter to the bowl. Whisk until combined.

Step 3

Gradually stir in 3 1/2 cups of all-purpose flour and the salt. Mix until a sticky dough forms.

Transfer the dough to a lightly floured surface and knead for 8–10 minutes, adding the remaining flour a little at a time as needed to prevent sticking. The dough should be smooth and elastic but still slightly tacky.

Place the kneaded dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm, draft-free place for 1–1.5 hours, or until the dough has doubled in size.
