  • 6 slices Bacon
  • 2 tablespoons Unsalted butter
  • 1 medium, diced Yellow onion

  • 4 cups Fresh or frozen corn kernels
  • 1 cup Heavy cream

  • 2 tablespoons, chopped (optional) Fresh parsley

Directions

Step 1

In a large pot or Dutch oven, cook the bacon over medium heat until crisp. Remove the bacon and place it on a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces and set aside.

In the same pot, leave about 2 tablespoons of the bacon grease. Add the unsalted butter and let it melt.
