Directions

Step 1

Wash the Russet potatoes thoroughly under running water to remove any dirt. You can peel them if desired, but leaving the skins on adds extra texture and flavor.

Using a mandoline slicer fitted with a waffle blade, cut the potatoes into waffle shapes. To achieve the criss-cross pattern, rotate the potato 90 degrees each time you make a slice.
