Ingredients

  • 500 grams fresh strawberries
  • 250 ml water
  • 100 grams granulated sugar
  • 15 grams unflavored gelatin
  • 2 tablespoons lemon juice

Directions

Step 1

Clean the strawberries by rinsing them under cold water. Hull the strawberries and cut them into quarters.

In a medium-sized saucepan, combine the strawberries with 200ml of water. Bring the mixture to a simmer over medium heat, stirring frequently.

Once the strawberries are softened (about 5-7 minutes), use a blender or immersion blender to puree the mixture until smooth.

Strain the strawberry puree through a fine-mesh sieve into a large bowl to remove the seeds and any large pieces. Press gently with a spatula to extract as much liquid as possible.

Return the strawberry liquid to the saucepan and add the sugar. Stir and bring back to a gentle simmer until the sugar is completely dissolved.
