Ingredients

  • 500 grams ground lamb (or beef)
  • 500 grams ground beef
  • 100 grams plain yogurt
  • 1 onion, finely grated
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon black pepper
  • 2 teaspoons salt
  • 2 tablespoons olive oil
  • 4 pita bread
  • 100 grams lettuce, shredded
  • 1 tomato, sliced
  • 1 cucumber, sliced
  • 200 grams yogurt, plain
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh mint, chopped

Directions

Step 1

In a large bowl, combine the ground lamb, ground beef, grated onion, minced garlic, yogurt, ground cumin, ground coriander, smoked paprika, dried oregano, cayenne pepper, black pepper, and salt. Mix well using your hands until all ingredients are thoroughly combined.

Step 2

Divide the meat mixture into two portions. Shape each portion into a cylindrical loaf, about 15-20 cm long.

Step 3

Wrap the loaves tightly in plastic wrap and refrigerate for at least 1 hour (or overnight) to allow the flavors to meld and the mixture to firm up.

Step 4

Preheat your oven to 180°C (350°F).

Step 5

Heat a non-stick oven-proof skillet over medium heat and add the olive oil. Unwrap the kebab loaves and sear them in the skillet for about 2-3 minutes on each side until browned.

Step 6

Transfer the skillet to the preheated oven. Bake the loaves for about 70-80 minutes, or until they register at least 74°C (165°F) in the center on a meat thermometer.

Step 7

While the meat is baking, prepare the sauce by combining the yogurt, lemon juice, and fresh mint in a small bowl. Mix well and refrigerate until ready to serve.

Step 8

Once the meat is cooked, let it rest for about 10 minutes. Then, use a sharp knife to slice the kebab into thin strips.

Step 9

Warm the pita bread in the oven for a few minutes.

Step 10

Assemble the doner kebabs by placing slices of the meat into the pita, followed by shredded lettuce, tomato slices, cucumber slices, and a generous spoonful of the yogurt-mint sauce. Serve immediately.
