Ingredients

  • 225 grams Sharp cheddar cheese
  • 56 grams Unsalted butter
  • 120 grams All-purpose flour
  • 0.5 teaspoons Kosher salt
  • 0.25 teaspoons Ground paprika
  • 2 tablespoons Cold water

Directions

Step 1

Grate the sharp cheddar cheese and let it come to room temperature for about 10 minutes.

Step 2

In a food processor, combine the grated cheddar cheese, unsalted butter, all-purpose flour, kosher salt, and ground paprika. Pulse until the mixture resembles coarse crumbs.

Step 3

Add cold water, one tablespoon at a time, and pulse until the dough comes together into a ball.

Step 4

Wrap the dough in plastic wrap and flatten it into a disc. Refrigerate for at least 30 minutes to firm up.

Step 5

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 6

Roll out the chilled dough on a lightly floured surface until it's about 1/8 inch thick.

Step 7

Use a fluted pastry cutter or a knife to cut the dough into 1-inch squares. Transfer the squares to the prepared baking sheets, leaving a tiny bit of space between each one.

Step 8

Use a toothpick to poke a small hole in the center of each square, to replicate the Cheez-It look and help with even baking.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the crackers are puffed and golden around the edges.

Step 10

Remove from the oven and let the crackers cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Step 11

Store in an airtight container at room temperature for up to 1 week.
