Ingredients

  • 3 cups rolled oats
  • 1 cup raw almonds
  • 1 cup raw pecans
  • 1 cup unsweetened shredded coconut
  • 0.5 cup pumpkin seeds
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup honey
  • 0.25 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup dried blueberries

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

In a large bowl, combine the rolled oats, almonds, pecans, shredded coconut, pumpkin seeds, chia seeds, ground cinnamon, and salt. Stir well to ensure everything is evenly mixed.

In a small saucepan, add honey and coconut oil. Heat over low-medium heat, stirring constantly until the coconut oil is melted and the mixture is smooth.
