Ingredients

  • 6 large Egg yolks
  • 200 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 250 milliliters Brandy
  • 100 milliliters Heavy cream

Directions

Step 1

Separate the egg yolks from the whites. Place the yolks in a large heatproof bowl and discard the whites (or save them for another recipe).

Step 2

Add the granulated sugar to the yolks and whisk vigorously until the mixture is pale and creamy, approximately 2 minutes.

Step 3

Mix in the vanilla extract and pour in the brandy a little at a time, whisking continuously to incorporate it into the yolk mixture.

Step 4

Place the bowl over a pot of barely simmering water (double boiler setup). Ensure the bottom of the bowl does not touch the water.

Step 5

Cook the mixture gently, stirring constantly with a whisk, for 10-12 minutes, or until it becomes thick enough to coat the back of a spoon. Do not let the mixture boil to prevent the egg yolks from scrambling.

Once thickened, remove the bowl from the heat and let it cool for 5 minutes.

Stir in the heavy cream to achieve a luscious consistency, and mix until smooth.

Transfer the advocaat into a sterilized bottle or jar, seal it tightly, and refrigerate. It will thicken further as it chills.
