Ingredients

  • 500 grams Ground pork
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Hoisin sauce
  • 2 teaspoons Sesame oil
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon Sugar
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 stalks Green onions, finely chopped
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Neutral cooking oil (e.g., vegetable or canola oil)

Directions

Step 1

In a small bowl, mix the cornstarch and water together to create a slurry. Set aside.

Step 2

Heat the neutral cooking oil in a skillet or wok over medium-high heat.

Step 3

Add the finely diced yellow onion to the skillet and sauté for 2-3 minutes, until softened and translucent.

Step 4

Add the minced garlic and ginger to the skillet and cook for another 30 seconds, until fragrant.

Step 5

Add the ground pork to the skillet and cook until it is no longer pink, breaking it apart into small pieces with a wooden spoon.

Step 6

Stir in the soy sauce, oyster sauce, hoisin sauce, sesame oil, Shaoxing wine, sugar, and black pepper. Mix well to evenly coat the pork in the sauces.

Step 7

Pour the cornstarch slurry into the skillet and stir continuously until the mixture thickens slightly, about 1-2 minutes.

Step 8

Remove the skillet from heat and stir in the finely chopped green onions.

Step 9

Let the filling cool to room temperature before using it as a filling for bao buns. The mixture should be thick and easy to scoop into the dough.
