Ingredients

  • 16 ounces Extra-firm tofu
  • 2 tablespoons Olive oil
  • 1 cup Onion, finely chopped
  • 1 cup Celery, finely chopped
  • 1 cup Carrot, grated
  • 3 cloves Garlic, minced
  • 3 tablespoons Nutritional yeast
  • 1 cup Breadcrumbs
  • 1 cup Chopped walnuts
  • 2 tablespoons Ground flaxseed
  • 6 tablespoons Water
  • 2 tablespoons Tamari or soy sauce
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried sage
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Ketchup or barbecue sauce (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard loaf pan with parchment paper.

Step 2

Drain and press the tofu to remove excess moisture. Crumble it into a large mixing bowl.

Step 3

In a small bowl, mix the ground flaxseed and water to create a flaxseed egg. Let it sit for 5 minutes to thicken.

Step 4

Heat the olive oil in a skillet over medium heat. Add the onion, celery, carrot, and garlic. Cook, stirring occasionally, for 5-7 minutes until softened.

Transfer the sautéed vegetables to the mixing bowl with crumbled tofu. Add nutritional yeast, breadcrumbs, chopped walnuts, tamari or soy sauce, thyme, sage, paprika, salt, and black pepper. Mix thoroughly.

Stir in the flaxseed egg and combine until the mixture holds together when pressed.

Transfer the mixture to the prepared loaf pan. Press it firmly and evenly into the pan.

Spread ketchup or barbecue sauce evenly over the top of the loaf.

Bake in the preheated oven for 50 minutes, or until the top is slightly caramelized and the loaf is firm to the touch.
