Ingredients

  • 6 large yellow onions
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 cup breadcrumbs
  • 0.75 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup vegetable broth
  • 2 tablespoons butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the onions and trim the tops and bottoms slightly to create a flat surface. Using a melon baller or small knife, carefully hollow out the center of each onion, leaving about a 1/2-inch thick shell. Reserve the onion cores for the filling.

Chop the reserved onion cores finely, and set them aside.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and chopped onion cores, and sauté for 3-5 minutes until softened and fragrant.
