Ingredients

  • 8 pounds bone-in ham
  • 1 cup dark brown sugar
  • 1 cup honey
  • 3 tablespoons Dijon mustard
  • 20 pieces whole cloves
  • 3 tablespoons butter
  • 0.5 cup rum
  • 0.5 cup orange juice
  • 0.25 cup maple syrup
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Using a sharp knife, score the surface of the ham in a diamond pattern. Place a whole clove at each intersection of the diamond cuts.

Step 3

In a small bowl, mix the dark brown sugar, honey, and Dijon mustard. This will be your glaze.

Step 4

Place the ham on a roasting pan with the flat side down. Brush the entire ham generously with half of the prepared glaze.

Step 5

Cover the ham loosely with aluminum foil and bake for 2 hours, basting every 30 minutes with the pan juices.

Step 6

While the ham bakes, prepare the Rumtedum sauce. In a medium saucepan, melt the butter over medium heat.

Step 7

Stir in the rum, orange juice, maple syrup, and remaining half of the glaze mixture. Bring to a gentle simmer, allowing the flavors to meld for about 5 minutes.

Step 8

In a small bowl, mix cornstarch and water until smooth, then whisk into the sauce. Simmer for another 2-3 minutes or until the sauce thickens. Remove from heat and set aside.

Step 9

After 2 hours, remove the ham from the oven. Brush with the remaining glaze and return to the oven uncovered for another 30 to 40 minutes, or until the ham is caramelized and reaches an internal temperature of 140°F (60°C).

Step 10

Let the ham rest for 15 minutes before slicing.

Step 11

Serve the ham slices drizzled with the warm Rumtedum sauce. Enjoy your holiday feast!
