Ingredients

  • 230 grams unsalted butter
  • 200 grams granulated sugar
  • 2 pieces large eggs
  • 2 teaspoons vanilla extract
  • 360 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoons salt
  • 240 grams powdered sugar (for icing)
  • 3 tablespoons milk (for icing)
  • 0.5 teaspoons vanilla extract (for icing)
  • 0 optional food coloring

Directions

Step 1

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 2

Add the eggs and vanilla extract to the bowl, and mix until fully combined.

Step 3

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a dough forms.

Step 5

Divide the dough into two portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.

Step 6

Preheat your oven to 175°C (350°F) and line baking sheets with parchment paper.

Step 7

Lightly flour your work surface and roll out one portion of dough to about 1/4-inch thickness.

Step 8

Use festive cookie cutters to cut out shapes and transfer the cookies to the prepared baking sheets, spacing them about 1 inch apart.

Step 9

Bake the cookies in the preheated oven for 8-10 minutes or until the edges are lightly golden. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Step 10

To make the icing, whisk together the powdered sugar, milk, and vanilla extract in a bowl until smooth. Add food coloring if desired.

Step 11

Using a piping bag or spoon, decorate the cooled cookies with the icing. Let the icing set for at least 1 hour before serving or storing.

Step 12

Store the cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
