Ingredients

  • 2 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 0.5 cup dried cranberries
  • 0.5 cup pistachios, shelled and roughly chopped
  • 0.5 cup white chocolate, melted (optional for drizzling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.

Step 3

In a separate medium bowl, whisk the eggs, melted butter, vanilla extract, and orange zest until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir until a dough begins to form. Add the dried cranberries and chopped pistachios, and mix until evenly distributed.

Step 5

Turn the dough onto a floured surface and divide it in half. Shape each portion into a log about 10 inches long and 2 inches wide. Place the logs onto the prepared baking sheet, leaving space between them to allow for spreading during baking.

Step 6

Bake in the preheated oven for 25–30 minutes, or until the logs are lightly golden and firm to the touch. Remove from the oven and allow to cool for about 10 minutes.

Step 7

Using a sharp serrated knife, slice the logs diagonally into 1/2-inch thick slices. Arrange the slices cut-side down on the baking sheet.

Step 8

Return the slices to the oven and bake for 10–12 minutes on one side. Flip the biscotti and bake for an additional 10–12 minutes on the other side, or until crisp and dry.

Step 9

Allow the biscotti to cool completely on a wire rack. If desired, drizzle with melted white chocolate for a festive touch.

Step 10

Store in an airtight container at room temperature for up to two weeks.
