Ingredients

  • 1 cup dried apricots
  • 4 cups apple cider
  • 2 cups orange juice
  • 1 cup pineapple juice
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 cinnamon sticks
  • 6 whole cloves
  • 0.25 teaspoons ground nutmeg
  • 2 cups water
  • 0.5 (for garnish) sliced orange
  • 0.25 cup (optional for garnish) fresh cranberries

Directions

Step 1

In a medium saucepan, combine the dried apricots and 2 cups of water. Bring to a boil over medium heat, then reduce to a simmer and cook for 10 minutes until the apricots are soft.

Step 2

Using an immersion blender or transferring to a countertop blender, blend the softened apricots and their cooking liquid until smooth. Set aside.

Step 3

In a large pot, combine the apple cider, orange juice, pineapple juice, lemon juice, and honey. Stir well to dissolve the honey.

Step 4

Add the cinnamon sticks, whole cloves, and nutmeg to the pot. Stir gently to incorporate the spices.

Step 5

Stir in the apricot puree until well combined.

Step 6

Heat the mixture over medium heat until it begins to simmer. Reduce the heat to low and let the wassail simmer uncovered for 20 minutes to allow the flavors to meld.

Step 7

Taste the wassail and adjust sweetness as needed by adding additional honey, 1 tablespoon at a time.

Step 8

Using a fine mesh strainer, remove the cinnamon sticks and cloves before serving.

Step 9

Ladle the wassail into mugs and garnish with a slice of orange and a few fresh cranberries, if desired. Serve warm and enjoy!
