Ingredients

  • 2 whole Cornish hens
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Hoisin sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 teaspoon (grated) Fresh ginger
  • 2 minced Garlic cloves
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Orange zest
  • 2 sliced (for garnish) Scallions
  • 1 teaspoon (for garnish) Sesame seeds

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the Cornish hens dry with paper towels and season them generously with salt and black pepper both inside and out.

Step 3

Heat the olive oil in a large oven-safe skillet or roasting pan over medium-high heat.

Step 4

Sear the Cornish hens, breast-side down, for 3-4 minutes until golden brown. Flip and sear the other side for another 3-4 minutes. Remove from heat and set aside.

Step 5

In a small bowl, whisk together hoisin sauce, soy sauce, honey, grated ginger, minced garlic, rice vinegar, and orange zest to create the glaze.

Step 6

Brush the prepared hoisin glaze generously over the hens, ensuring they are well-coated. Reserve about 2 tablespoons of the glaze for basting later.

Step 7

Place the skillet or roasting pan into the preheated oven. Roast the hens for 45-50 minutes, basting with the reserved glaze halfway through cooking.

Step 8

The hens are done when the internal temperature reaches 165°F (74°C) in the thickest part of the thigh, and the skin is caramelized and glazed.

Step 9

Remove the hens from the oven and let them rest for 10 minutes before carving.

Step 10

Garnish with sliced scallions and sesame seeds. Serve warm with your favorite sides.
