  • 1 lb ground beef
  • 3 medium potatoes
  • 3 medium carrots
  • 1 large onion
  • 2 stalks celery stalks
  • 1 14 oz can canned diced tomatoes
  • 4 cups beef broth
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 tbsp olive oil
  • 3 cloves garlic cloves
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Peel and chop the potatoes, carrots, and onion into bite-sized pieces. Dice the celery and mince the garlic.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it into small pieces. Remove the cooked beef from the pot and set aside.

In the same pot, add the onion, celery, and garlic. Sauté for 3-5 minutes, or until the vegetables are slightly softened.

Stir in the potatoes and carrots. Cook for another 5 minutes, stirring occasionally.
