Ingredients

  • 1 pound Ground beef (or ground turkey/chicken as an alternative)
  • 3 medium Potatoes (Yukon gold or red potatoes, diced small)
  • 2 medium Carrots (sliced thin)
  • 1 small Onion (chopped)
  • 1 medium Bell pepper (chopped, any color)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 0.5 cup Cheddar cheese (optional, shredded)
  • 4 sheets Heavy-duty aluminum foil

Directions

Step 1

Start your campfire or preheat a grill to medium-high heat. If using a campfire, wait until you have hot embers or low flames to cook over.

Step 2

Lay out 4 sheets of heavy-duty aluminum foil, each about 18 inches long.

Step 3

In a mixing bowl, combine the ground beef (or alternative), diced potatoes, sliced carrots, chopped onion, and bell pepper.

Step 4

Drizzle the olive oil over the ingredients in the bowl and sprinkle in the salt, black pepper, garlic powder, and paprika. Toss everything until evenly coated.

Step 5

Divide the mixture into 4 equal portions and place each portion onto the center of a foil sheet.

Step 6

If desired, sprinkle shredded cheddar cheese over each portion for an extra layer of flavor.

Step 7

Fold the edges of each foil sheet up and over the food to create a sealed packet. Be sure there are no gaps to prevent juices from leaking out during cooking.

Step 8

Place the foil packets on the grill or campfire embers. Cook for 25-30 minutes, flipping halfway through, until the meat is fully cooked and the vegetables are tender.

Step 9

Carefully open the foil packets (they will be hot!) and serve directly from the foil or transfer to plates. Enjoy your hearty campfire meal!
