Ingredients

  • 500 g Potatoes (starchy)
  • 400 g Apples (sweet-tart, like Granny Smith or Jonagold)
  • 1 large Onion
  • 50 g Butter
  • 100 ml Milk
  • 4 links Black pudding or smoked sausage
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.25 tsp Nutmeg (optional)
  • 2 tbsp Vegetable oil
  • 1 tbsp Chopped parsley (optional, for garnish)

Directions

Step 1

Peel and dice the potatoes into roughly 2-inch chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until the potatoes are tender when pierced with a fork.

Peel, core, and chop the apples into small slices. Set them aside.

Step 3

Peel and finely slice the onion. Heat 25g of butter in a large frying pan over medium heat and sauté the onion until soft and lightly golden, about 5-7 minutes. Remove from the pan and set aside.
