Ingredients

  • 226 grams unsalted butter
  • 100 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 280 grams all-purpose flour
  • 0.5 teaspoon salt
  • 1 large egg white
  • 150 grams sweetened shredded coconut

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes using a hand mixer or stand mixer.

Add in the vanilla extract and mix until incorporated.

In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the flour mixture to the butter mixture, beating on low speed until a dough forms.

Divide the dough into two portions. Roll each portion into a log about 2 inches in diameter. Wrap the logs tightly in plastic wrap and refrigerate for at least 30 minutes, or until firm.
