Ingredients

  • 500 grams Ground beef (80% lean)
  • 50 grams Breadcrumbs
  • 1 large Egg
  • 2 cloves Minced garlic
  • 2 tablespoons Fresh parsley, chopped
  • 1 medium Onion, finely diced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons All-purpose flour
  • 30 grams Unsalted butter
  • 250 milliliters Beef stock
  • 100 milliliters Heavy cream
  • 2 tablespoons Scotch whisky
  • 2 tablespoons Olive oil

Directions

Step 1

In a large mixing bowl, combine the ground beef, breadcrumbs, egg, garlic, parsley, onion, salt, and black pepper. Mix well using your hands until all ingredients are evenly incorporated.

Step 2

Divide the mixture into 16-18 equal portions and roll each into a ball about the size of a golf ball. Set aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches and cook for 8-10 minutes, turning occasionally, until they are browned on all sides and cooked through. Remove the meatballs from the skillet and set aside.

Step 4

In the same skillet, melt the butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to form a smooth roux.

Step 5

Slowly whisk in the beef stock, making sure there are no lumps. Cook for 2-3 minutes until the sauce starts to thicken.

Step 6

Stir in the heavy cream and whisky, then simmer for another 2-3 minutes, allowing the flavors to meld together.

Step 7

Return the meatballs to the skillet, covering them with the sauce. Simmer for 5 minutes, occasionally spooning the sauce over the meatballs.

Step 8

Serve the Highland Beef Balls hot, alongside mashed potatoes or buttered vegetables for a complete meal.
